Quesadillas are a delicious lunch, dinner, or snack that have a lot of opportunity for creativity. These Chicken Club Quesadillas will add a little pizazz to your go-to quesadillas and will make everyone happy.
Shortly after my husband and I were married, I started hinting that I wanted to have children . . . lots of them!
When I finally got him on board with the whole baby idea, it took a VERY long time for us to get pregnant. Miraculously, our sweet baby girl was born and suddenly my dream of having a big family changed a little bit . . .
Instead of thinking of having 6 kids, I decided that 5 would be more realistic. A couple of years later, I had another baby and I remember thinking, “Maybe just 4. 4 kids is a great number.”
Then another daughter joined the fam and as I was up in the middle of the night feeding my baby, I remember thinking in my sleep-deprived brain, “3 kids. 3 kids is more than enough.” 🙂
Mothering is a tough job! One of the biggest eye-openers for me has been mealtime. My kids have all been picky eaters and it seems to get worse and worse until they turn about 5 years old.
I refuse to be a short-order cook and make a million different dishes for everyone, so I try to find dishes that everyone likes.
Sandwiches are a popular choice, especially in the summer when I hate to turn on my oven, and everyone can pick the toppings that they want on their sandwich. These quesadillas are a fun twist on one of our favorite sandwiches and will become an instant family favorite in your home!
How to Make Chicken Club Quesadillas
The first step is to stuff your tortillas with all the yummy stuffings. Begin by spreading mayonnaise on each of the tortillas (if using mayo).
Next, Layer the chicken, ham, cheese, bacon, and other toppings on half of each tortilla. Then, when you have added your stuffings, fold the tortilla over and press down.
Heat a skillet over medium heat. Lightly brush melted butter (or olive oil) on both sides of the tortilla. This will help the tortilla to crisp while cooking.
Cook each quesadilla for 3-4 minutes each, until they are golden brown, turning over once.

When to add toppings:
When you add various toppings all depends on whether or not you like them hot. We recommend adding the meats and cheeses before you cook the quesadillas.
However, some people prefer to add cold toppings such as lettuce, tomato, and avocado at the end. If you’re adding toppings after you’ve cooked your quesadillas, simply pull them apart and slip them inside. Enjoy!

Ingredients
- 8 flour tortillas
- 3 Tablespoons mayonnaise optional topping
- 8 slices deli sliced chicken breast or turkey
- 8 slices deli sliced ham
- 8 slices cheddar cheese
- 8 bacon strips cooked
- 2 tomatoes sliced, optional topping
- 4 lettuce leaves optional topping
- ½ cup pickle slices optional topping
- ¼ cup sliced banana peppers optional topping
Instructions
Spread mayonnaise on each tortilla (if using mayo).
Layer the chicken, ham, cheese, bacon, and other toppings on half of each tortilla.

You can do it either way. Some of us like our tomatoes and lettuce cold and not grilled. It's easy to sneak it in after!
